Equipment

  • Large mixing bowl
  • TSP measuring spoon
  • Aluminum foil
  • Plastic wrap
  • Refrigerate when done

Ingredients

  • 3 lbs Deer burger
  • 1 lbs Ground beef
  • 2 lbs Sausage
  • 5 tso Liquid smoke
  • 5 tsp Garlic salt
  • 5 tsp Cracked pepper (I use whole pepper)
  • 5 tsp Mustard seed
  • 5 tsp Mortons curing salt

Instructions

  • Mix all ingredients together and put in the refrigerator for three days, mixing every day.
  • Roll and put in oven at 200 degrees.
  • Cook 7-8 hours (usually overnight). (It will be a long night)

Notes

Deer salami is probably my favorite wild game recipe. It's from my childhood (Justin)
After it is done you can roll the rolls up with aluminum foil to give out to family & friends.
